  • 3 ripe mangoes peeled and seeded, 3 cups mango puree
  • 1/3 cup sugar
  • 1 teaspoon unflavored gelatin
  • 1/4 cup water
  • 1 cup whipping cream

Step 1

In a saucepan combine sugar and gelatin, stir in 1/4 cup cold water.

Step 2

Cook and stir over low heat just until gelatin dissolves, remove from heat, stir in mango puree, cool mixture to room temperature.

Step 3

In the chilled bowl beat whipping cream with an electric mixer on low speed until soft peaks.

Step 4

Using a rubber spatula, fold mango mixture into whipped cream.

Step 5

Cover the bowl with cling wrap and chill until mixture mounds when spooned.

Step 6

Divide the mango mixture among 6 dessert glasses, cover and chill for 4 hours or until set.

Step 7

An easy, delicious, and fresh dessert that you can elegantly serve at lunch.
