  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 cup red onion , finely diced
  • 1 cup carrot, finely diced
  • 1 cup peppers mix, finely diced
  • 1 teaspoon cumin
  • 1 teaspoon finely fresh basil
  • 1 teaspoon finely fresh oregano
  • 2 stalks celery, finely diced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Step 1

In a saucepan, bruno the 2 cups water to a boil, add the quinoa to it and simmer on low heat whit the saucepan covered. Cook the quinoa Intel the liquid has evaporated and the quinoa is tender.

Step 2

Stuffing: Heat the olive pilón a pan and sauté the garlic, onion, carrot and peppers mix, for 3 minutes, add the cooked quinoa, cumin, basil, oregano, celery and chili powder and continue to sauté for 2 more minutes.

Step 3

Salt and pepper to taste.

Step 4

Fill the chiles with the stuffing and cover with aluminum foil, grill for 10 minutes.

Step 5

Delicious to serve at a barbecue with ribs, beef or chicken.
