  • 1 lb large shrimp, peeled and deveined, tails on
  • 1⁄2 cup all-purpose flour
  • 2 large eggs, beaten1 cup panko breadcrumbs
  • 1⁄2 cup unsweetened shredded coconut
  • 1⁄2 teaspoon paprika
  • 1⁄2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Cooking spray olive oil or avocado oil

Place the flour in a shallow dish.

In another dish, whisk the eggs.

In a third dish, combine panko breadcrumbs, shredded coconut, paprika, garlic powder, salt and pepper.

Pat the shrimp dry with paper towels.

Dredge each shrimp in flour, shaking off excess.

Dip into the beaten egg.Coat well with the panko-coconut mixture, pressing gently to help it stick.

Preheat to 375°F (190°C) for about 3 minutes.

Line the air‑fryer basket with an air‑fryer liner, making sure it lies flat before adding any food—no cooking spray needed.

Arrange shrimp in a single layer without overcrowding.

Spray the tops of the shrimp lightly with oil.

Cook for 10 minutes, flipping halfway, until golden brown and crispy.

Remove and serve immediately with sweet chili sauce, mango salsa, or a squeeze of fresh
lime.
