Pulled Chicken for Burgers

Ingredients
- 2 large chicken breasts
- 1 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup barbecue sauce
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon chili powder
- Salt and black pepper, to taste
Instructions
Step 1
Rub the chicken with smoked paprika, cumin, chili powder, salt, and pepper.
Step 2
Heat the olive oil in a large skillet or pot over medium-high heat.
Step 3
Sear the chicken on both sides for 2–3 minutes until golden brown. Remove and set aside.
Step 4
In the same skillet, sauté the onion and garlic until softened and fragrant, about 3 minutes.
Step 5
Return the chicken to the pan. Add chicken broth and half of the barbecue sauce. Cover and simmer over low heat for 25–30 minutes, or until the chicken is fully cooked and tender.
Step 6
Transfer the chicken to a plate and shred it using two forks.
Step 7
Return the shredded chicken to the pan, add the remaining barbecue sauce, and stir well to coat. Simmer for 5 minutes to let the flavors blend.
Step 8
Pile the pulled chicken onto toasted burger buns. Add rucula, red onion and caesar dressing or coleslaw, pickles with extra barbecue sauce if desired.
Step 9
Place all the leftover cooked chicken into a Diamond Freezer Bag, press out any excess air, and seal tightly before storing it in the freezer for future use
