  • 2 cups couscous
  • 2 cups water
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon cinnamon
  • 1 cup red pepper chopped
  • 1 cup yellow pepper chopped
  • 1/2 cup red onion minced
  • 1/2 cup dried figs sliced
  • 1/2 cup dried apricot sliced
  • 1/2 cup raisins
  • 1 cup shelled pistachios toasted
  • 1/2 cup minced fresh cilantro
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest

Step 1

Preheat the oven to 375°F (190°C)

Step 2

Place the couscous on a baking pan, Roast the couscous for 10 minutes whit the turmeric, cumin, cardamom, cinnamon, red onion and peppers until golden brown, cool and place the couscous in a bowl.

Step 3

Combine the water whit the couscous and bring to a boil and cover.

Step 4

Simmer the couscous loosely covered for 10 minutes, until all water is absorbed and the couscous becomes tender combine with figs, apricot, raisins, pistachios, cilantro and orange, lemon zest.

Step 5

Salt and pepper to taste and serve hot.

Perfect as a side dish for lamb, chicken or beef
